Zucchini Noodles with a Marinara Sauce

Classic pasta with marinara sauce without the carbs. Zucchini noodles are versatile and really compliment the flavor of this sauce. It is light and a great way to add vegetables to you meal.

INGREDIENTS
1 medium Zucchini, peeled with vegetable peeler
1 tsp. Olive Oil
2 cloves garlic, minced
1 tsp. Olive Oil
14 ounces Tomato, Canned Whole Peeled
1 tsp. salt
1 tsp. spice, red chili pepper
1 tsp. Oregano
8 leaves fresh basil, chopped
1 tablespoons Parmesan Cheese, Grated

METHOD

1. Wash zucchini well and remove ends.
2. Finely slice zucchini with vegetable peeler to make thin noodles.
3. Place in a strainer and set aside.

Marinara Sauce

1. Peel and mince garlic cloves.
2. Place garlic in a small sauce pan with 1 tsp of olive oil and place on high heat.
3. When garlic is toasted add 14 ounce can of chopped tomatoes.
4. Add salt, red pepper and oregano. Stir well.
5. Cover and let tomatoes cook on medium high heat. The trick to this sauce is to cook it at a boil for approximately 15-20 minutes once all the water has evaporated from the sauce and you are left with a thick chunky tomato sauce you know that it is done.
6. While sauce is cooking place in a saute pan add 1 tsp of olive oil and place on high heat.
7. Add zucchini noodles and cook 1-3 minutes. If you like you noodles aldente cook for 1minute or less. If you like you noodles soft then cook for at least 3 minutes.
8. Transfer zucchini noodles to a strainer to remove excess water.
9. Place zucchini noodles in a dish and top with marinara sauce and parmesan cheese.

Choose your canned tomatoes wisely! If you are familiar with making tomato sauces from canned tomatoes you know what I am talking about. If you are not be aware that some canned tomatoes have a very bitter flavor and that is where adding sugar to sauces came into play. If you purchase a quality canned tomato they tend not to have that bitter flavor. Some brands that I like using include: Cento, Muir Glen Organic.

Also another note on this recipe. It is important that you use chopped or whole peeled tomatoes. Do not use a tomato puree or sauce. If you do use the whole peeled tomatoes you will have crush them once they have cooked with a wooden spoon or a whisk.
